Ingredients

  • 2 Chicken Breasts Boneless, skinless
  • 1 cup Marinara Sauce
  • 1 tbsp Olive Oil
  • 2 cloves Garlic Minced
  • 1/2 Onion Chopped
  • 1/2 cup Tomatoes Diced, fresh or canned
  • 1/2 tsp Salt Adjust to taste
  • 1/4 tsp Black Pepper
  • 1 tsp Basil Dried or fresh, optional

Instructions

  • Pat the chicken breasts dry and season both sides with salt and black pepper.
  • Heat olive oil in a skillet over medium heat. Add the chicken and sear for 3-4 minutes per side until golden brown. Remove and set aside.
  • In the same skillet, add the chopped onion and garlic. Sauté for 2 minutes until fragrant.
  • Add diced tomatoes and marinara sauce to the skillet. Stir and let simmer for 5 minutes.
  • Return the chicken to the skillet, cover, and cook for 10 minutes or until the internal temperature reaches 165°F (74°C).
  • Sprinkle with fresh or dried basil before serving. Enjoy over pasta, rice, or with crusty bread.

Notes

For a spicy kick, add a pinch of red pepper flakes. Try using chicken thighs for a juicier version.
