Instructions
In a large pot, melt butter over medium heat. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
Sprinkle flour over the vegetables and stir well to coat. Cook for 1 minute.
Add chicken broth gradually while stirring. Bring to a simmer.
Add chicken, salt, pepper, and thyme. Simmer for 20 minutes, stirring occasionally.
Meanwhile, prepare the dumplings: In a bowl, mix flour, baking powder, and salt. Stir in milk and melted butter until a soft dough forms.
Drop spoonfuls of dumpling dough into the simmering broth. Cover and cook for 15 minutes, without lifting the lid.
Notes
For a healthier version, use whole wheat flour for the dumplings and skinless chicken breast.
