Ingredients

Chicken and Broth

  • 1 lb boneless, skinless chicken breast cut into bite-sized pieces
  • 4 cups low-sodium chicken broth
  • 1 cup carrots diced
  • 1 cup celery diced
  • 1 cup onion chopped
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp thyme dried

Dumplings

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1 tbsp butter melted

Instructions

  • In a large pot, melt butter over medium heat. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
  • Sprinkle flour over the vegetables and stir well to coat. Cook for 1 minute.
  • Add chicken broth gradually while stirring. Bring to a simmer.
  • Add chicken, salt, pepper, and thyme. Simmer for 20 minutes, stirring occasionally.
  • Meanwhile, prepare the dumplings: In a bowl, mix flour, baking powder, and salt. Stir in milk and melted butter until a soft dough forms.
  • Drop spoonfuls of dumpling dough into the simmering broth. Cover and cook for 15 minutes, without lifting the lid.

Notes

For a healthier version, use whole wheat flour for the dumplings and skinless chicken breast.
