  • 1 lb shaved beef (ribeye recommended)
  • 1 large onion, thinly sliced
  • 1 optional bell pepper, thinly sliced
  • 4 hoagie rolls
  • 4 slices provolone, American, or cheese whiz
  • 2 tbsp olive oil
  • salt and pepper to taste

Instructions

  • Prepare the vegetables: Heat 1 tablespoon of olive oil in a skillet over medium heat. Add sliced onions (and peppers if using) and sauté until softened and slightly caramelized. Remove and set aside.
  • Cook the beef: Add the remaining olive oil to the skillet. Cook the shaved beef in batches, seasoning with salt and pepper. Use tongs or a spatula to break apart the beef and cook until browned.
  • Combine ingredients: Return the onions and peppers to the skillet and mix with the beef.
  • Assemble the sandwich: Open the hoagie rolls and fill them with the beef and vegetable mixture. Top with cheese.
  • Melt the cheese: Place the assembled sandwiches under a broiler for 1-2 minutes or until the cheese melts. Serve hot and enjoy this classic comfort food.

Notes

For added flavor, toast the hoagie rolls lightly before assembling the sandwiches.
