Instructions
Marinate the chicken breasts in buttermilk for at least 2 hours (or overnight) in the refrigerator.
In a bowl, mix together the flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
Dip each piece of marinated chicken into the flour mixture, then into the beaten egg, and back into the flour mixture for a double coating. Let the coated chicken rest for 10 minutes.
Heat oil in a deep pan to 350°F (175°C). Fry the chicken for 6-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F or 74°C).
Drain the fried chicken on a wire rack to keep it crispy.
Toast the brioche buns lightly. Spread mayo on the bottom bun, then layer with lettuce, tomato slices, and pickles.
Place the fried chicken on top, add the top bun, and serve immediately.
Notes
For extra juiciness, brine the chicken in saltwater before marinating. Adjust spices to your taste preference.
