Ingredients

Chicken

  • 2 pieces chicken breast
  • 1 cup buttermilk for marinating

Coating

  • 1 cup all-purpose flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper optional for heat
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 egg beaten, for egg wash

Assembly

  • 2 brioche buns toasted
  • as needed lettuce
  • as needed tomato sliced
  • as needed pickles
  • as needed mayo

Instructions

  • Marinate the chicken breasts in buttermilk for at least 2 hours (or overnight) in the refrigerator.
  • In a bowl, mix together the flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
  • Dip each piece of marinated chicken into the flour mixture, then into the beaten egg, and back into the flour mixture for a double coating. Let the coated chicken rest for 10 minutes.
  • Heat oil in a deep pan to 350°F (175°C). Fry the chicken for 6-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F or 74°C).
  • Drain the fried chicken on a wire rack to keep it crispy.
  • Toast the brioche buns lightly. Spread mayo on the bottom bun, then layer with lettuce, tomato slices, and pickles.
  • Place the fried chicken on top, add the top bun, and serve immediately.

Notes

For extra juiciness, brine the chicken in saltwater before marinating. Adjust spices to your taste preference.
