Dry Ingredients
1.5cupsall-purpose flour
1.5teaspoonsbaking powder
0.5teaspoonbaking soda
1tablespoonsugar
0.5teaspoonsalt
Wet Ingredients
1.25cupsbuttermilkat room temperature
1eggbeaten
2tablespoonsmelted butterplus more for cooking
Instructions
In a large bowl, whisk together the flour, baking powder, baking soda, sugar, and salt until evenly combined.
In a separate bowl, combine the buttermilk, beaten egg, and melted butter. Stir until smooth.
Gradually add the wet ingredients to the dry ingredients, folding gently with a spatula. Mix just until combined; the batter should be slightly lumpy to ensure fluffy pancakes.
Let the batter rest for 5-10 minutes while you preheat a skillet or griddle over medium heat. Lightly grease the surface with butter or oil.
Pour about ΒΌ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges appear set, then flip carefully and cook for an additional 1-2 minutes until golden brown.
Serve immediately with butter and warm syrup, or your choice of toppings.
Notes
Avoid overmixing the batter to keep the pancakes light and fluffy. For added flavor, consider incorporating vanilla extract or cinnamon into the batter.
