Ingredients

  • 1 cup steel-cut oats for chewy texture
  • 2 cups water
  • 1 medium apple peeled and diced, Honeycrisp recommended
  • 1 medium carrot peeled and finely grated
  • 1 teaspoon cinnamon for warm flavor
  • 1 tablespoon honey optional, for sweetness
  • 1 pinch salt enhances flavors

Instructions

  • Bring 2 cups of water to a boil in a medium saucepan over medium-high heat. Add a pinch of salt and stir in 1 cup steel-cut oats. Lower heat to a simmer and cook for 10 minutes, stirring occasionally.
  • Add the diced apple and grated carrot to the oats. Sprinkle in 1 teaspoon cinnamon and stir well. Cook for 5-7 more minutes, stirring occasionally, until apples soften.
  • Remove from heat when oats are creamy and apples are tender. Stir in 1 tablespoon honey if desired. Taste and adjust with more cinnamon or salt. Serve warm.

Notes

Top with walnuts or a splash of milk for extra flavor. Use rolled oats for a quicker version.
