Equipment

  • Medium Saucepan
  • Baking Sheet
  • Parchment Paper

Ingredients

  • 2 cups pecan halves raw, unsalted
  • 1 cup granulated sugar
  • 0.5 cup light brown sugar packed
  • 0.5 cup unsalted butter
  • 0.25 cup heavy cream
  • 1 teaspoon vanilla extract
  • salt pinch

Instructions

  • Line a baking sheet with parchment paper or a silicone mat. Spread 2 cups of pecan halves evenly across it.
  • In a medium saucepan, melt 0.5 cup unsalted butter over medium heat. Stir in 1 cup granulated sugar, 0.5 cup packed light brown sugar, 0.25 cup heavy cream, and a pinch of salt.
  • Bring the mixture to a gentle boil, stirring constantly for 3-4 minutes until it thickens slightly and turns golden.
  • Remove the pan from heat and stir in 1 teaspoon vanilla extract. Pour the hot mixture evenly over the pecans on the baking sheet, coating them well.
  • Let the candy cool at room temperature for 15-20 minutes until it hardens. Break into bite-sized pieces with your hands or a knife.

Notes

For extra flavor, toast the pecans lightly before starting. Store in an airtight container for up to 2 weeks.
