Ingredients

Beef Tips

  • 1-2 pounds beef tips sirloin, chuck roast, or tenderloin
  • 1 large onion sliced
  • 2 cloves garlic minced
  • 2 cups beef broth
  • 2 tablespoons flour or cornstarch
  • 2 tablespoons oil or butter
  • to taste salt and pepper

Optional Additions

  • as needed mushrooms sliced
  • 1/2 cup red wine optional
  • as desired fresh herbs thyme, rosemary, parsley

Instructions

  • Heat oil in a large skillet over medium-high heat.
  • Season beef tips with salt and pepper, then sear until browned on all sides. Remove and set aside.
  • In the same skillet, sauté onions and garlic until fragrant.
  • Deglaze the pan with a splash of beef broth, scraping up browned bits.
  • Return beef to the skillet, add remaining broth, and simmer on low for 45 minutes to 1 hour, stirring occasionally.
  • Thicken the sauce with a slurry of flour or cornstarch mixed with water before serving.

Notes

For a creamier version, replace 1 cup of beef broth with heavy cream or sour cream. Optionally, marinate the beef tips for added tenderness and flavor.
