Ingredients

Base Ingredients

  • 2 cups canned pineapple chunks drained, reserve juice
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 cup shredded cheddar cheese

Topping Ingredients

  • 1 sleeve Ritz crackers crushed
  • 1/2 cup unsalted butter melted

Instructions

  • Preheat your oven to 350°F (175°C).
  • Drain the pineapple chunks and save the juice.
  • Crush the Ritz crackers into coarse crumbs using a rolling pin.
  • In a large mixing bowl, combine the drained pineapple chunks, sugar, and flour. Stir until everything is well-coated.
  • Add the shredded cheddar cheese and mix gently.
  • If the mixture seems too dry, add a tablespoon or two of the reserved pineapple juice.
  • In a separate bowl, mix the crushed Ritz crackers with melted butter.
  • Spread the pineapple mixture evenly into a greased 9x9-inch baking dish.
  • Sprinkle the cracker mixture over the top, making sure to cover the entire surface.
  • Bake for 25-30 minutes, or until the topping is golden brown and the casserole is bubbly around the edges.
  • Let it cool for 5-10 minutes before serving.
