Ingredients

  • 1.5 cups raisins dark or golden, your pick
  • 0.75 cups granulated sugar
  • 1 tablespoon all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice freshly squeezed
  • 1 cup water
  • 1 tablespoon unsalted butter
  • 1 package refrigerated pie crusts 14 oz, 2 crusts
  • 1 egg beaten, for egg wash

Instructions

  • Preheat your oven to 375°F (190°C) to ensure it’s ready for baking.
  • In a medium saucepan, combine raisins, sugar, flour, cinnamon, lemon juice, and water. Stir over medium heat until thickened, about 5-7 minutes. Remove from heat, stir in butter, and let cool slightly.
  • Roll out one pie crust and fit it into a 9-inch pie dish. Trim any excess dough from the edges.
  • Pour the cooled raisin mixture into the crust, spreading it evenly with a spatula.
  • Roll out the second crust and place it over the filling. Crimp the edges to seal, cut a few slits in the top for steam, and brush with beaten egg for a shiny finish.
  • Bake for 25-30 minutes until the crust is golden brown. Let cool for 10 minutes before slicing.

Notes

Soak raisins in warm water for 10 minutes before cooking for extra juiciness—drain well first! Serve with vanilla ice cream or whipped cream for a delightful treat.
